String Beans
If you don't grow your own vegetables, try one green bean at the market.
If tough, won’t snap right, then don’t buy them as they have been
setting there too long or may be too big to snap well. Frozen green
beans will not work, so don't even try it. Buy as much as you need.
Bring the string beans home and break off the sharp ends, then string
them. Snap into three or more pieces, depends on the size you like.
Rinse well. Place in pot with water about half way up the beans and cook
‘til tender. I always cook them, covered, in ham broth or with a ham
hock. When done, cut up the hock meat and serve along with the string
beans. Salt and pepper to taste. *It is always better-tasting to boil
the ham hock first and then add the fresh vegetables to cook, but turns
out okay as described above.
