Sassafras Tea
Daddy and I used to dig up the sassafras roots. That smell of those
roots is one of the best on earth. Take the roots in and wash them,
cutting off tough ends. Cover with water and boil ‘til the water turns
color. Serve immediately. Drink plain. Some folks add honey, but to me,
that alters the taste of the sassafras. This does not keep well. Some
folks used to store it in the ice box, but the color and fragrance
changed, so make just what you need.
