Granny’s Fried Apple Jacks
This recipe comes from the collection of my grandmother Ada Mercer Stroud
Granny had a couple of apple trees in the back yard, so she dried her own apples.
She had a piece of tin, the kind that goes on buildings, cut to about a four foot
length. Granny peeled and sliced her apples, and then placed each slice side by
side on the tin. She set the tin outside in the sunshine each morning and took it
in each night. Every day, she would turn the apple slices over. When the apples
were dry enough to keep, she stored them in a cloth bag and hung them in the
pantry until she was ready to use them.
Cook 1 package of dried apples in small amount of water until tender and most water has
cooked out. Mash up real good and add sugar to taste. Add a little cinnamon if desired.
Use your favorite biscuit dough recipe and pinch off and roll out each to about 6 inches around.
Put 1 to 2 tablespoons apple mixture on one side of a round and flip the other side over.
Press edges together with your fingers and then go around the edge with fork tines, making
sure the edges are sealed. Fry 2 at a time in the iron skillet and drain on paper towels.
You may use canned biscuits in place of the dough recipe and roll each biscuit out to about
5 or 6 inches round.
