Hoecakes with Flour
Take some flour, self-rising is best. If you don’t have self-rising,
then make a mix similar to biscuits except thinner, using baking soda
and/or baking powder. Add some buttermilk, some melted grease or lard,
and mix well. This mixture should be similar to a regular pancake
mixture. Pour all the flour mixture onto a hot, greased iron skillet or
griddle and lower heat to about medium. Let the hoecake cook until it
looks done on the bottom. Take a dinner plate and slide the hoecake
/cooked side down/ onto the plate. Invert the plate over the griddle,
drop the hoecake, raw side down, and cook until done. This bread is
excellent for breakfast, but I like it for dinner with greens.
